REHIS Diploma in Advanced Food Hygiene

The REHIS Advanced Diploma in Food Hygiene provides a nationally recognised qualification that is a must for all catering Supervisors/Managers who want to learn more at advanced level about the principles and management of food hygiene in all types of food premises.

Course Content

On this intensive course, the following modules will be covered:

  • General Introduction
  • Bacteriology
  • Bacterial Food Poisoning
  • Food Borne Infections
  • Non- Bacterial Food Poisoning
  • Food contamination and its prevention
  • Personal hygiene
  • Food storage and temperature control
  • Food Preservation
  • Design, Construction and maintenance of food premises, equipment and utensils
  • Pest control
  • Food Safety Management
  • Hazard Analysis critical control point
  • The training and Education of Food Handlers
  • Legislation

Entry Requirements

A current REHIS Intermediate Food Hygiene Certificate or equivalent is required.

Course Timetable

5 day course

4 November 2020 start date


There are a number of assignments and exams to be completed

  • 4 written assignments must be passed before candidates can sit REHIS exams
  • 3 hour written exam (during the morning of the exam day)
  • ½ oral conducted by REHIS (during the afternoon of the exam day)


Completing this course will help you to improve food hygiene standards and operations within your area of work.
